Check out this Dreamy Rainbow Salad with Creamy Tahini Poppy Seed
Ingredients:
Tahini Poppy Seed Dressing:
1/4 cup runny tahini
2-3 tbsp cold water
Juice of 1 lemon
1 tbsp white wine or apple cider vinegar
1 tbsp maple syrup
1 tbsp Dijon mustard
1 tbsp poppy seeds
Salt and black pepper to taste
Whisk together all ingredients until smooth, and season to taste with salt and black pepper. Keeps well in the fridge for several days.
Rainbow Salad:
Finely chopped kale
Avocado
Strawberries
Cucumber
Cherry heirloom tomatoes
Red radishes
Mini sweet peppers
Sourdough croutons
Mix some of the dressing with the chopped kale, then top it with sliced veggies and fruit. Serve with remaining dressing on the side. Enjoy!
