This ultra-creamy Vegan Salted Caramel Ice Cream is a dreamy, indulgent treat that tastes just like the real thing — but completely dairy-free! Whether you’re fully vegan, lactose-intolerant, or just looking for a healthier dessert option, this ice cream will satisfy your cravings without guilt.
Ingredients (Makes about 1 quart / 6–8 servings)
For the Salted Caramel Sauce:
½ cup coconut sugar or maple syrup
¼ cup full-fat coconut milk
2 tablespoons coconut oil or vegan butter
1 teaspoon vanilla extract
½–¾ teaspoon sea salt (adjust to taste)
For the Ice Cream Base:
2 cans (13.5 oz each) full-fat coconut milk (chilled overnight)
½ cup cashew butter or almond butter (for extra creaminess)
⅓ cup maple syrup or agave
2 teaspoons vanilla extract
¼ teaspoon xanthan gum (optional, for better texture)
Pinch of sea salt
Optional Mix-Ins:
Crushed vegan caramel candies
Chopped toasted pecans
Extra caramel swirl
Instructions
Make the salted caramel: In a small saucepan over medium heat, combine coconut sugar, coconut milk, and coconut oil. Stir until dissolved and bring to a gentle simmer. Cook for 5–7 minutes until it thickens slightly. Remove from heat, stir in vanilla and sea salt. Let cool completely.
Prepare the ice cream base: Scoop the solid coconut cream from the chilled cans into a high-speed blender (save the liquid for smoothies). Add cashew butter, maple syrup, vanilla, xanthan gum (if using), and a pinch of salt. Blend until completely smooth and creamy.
Combine: Pour in about ⅓ cup of the cooled salted caramel sauce and blend briefly to create a light swirl. (Reserve the rest for drizzling.)
Churn or freeze:
With Ice Cream Maker: Pour mixture into your machine and churn according to manufacturer instructions (usually 20–30 minutes). In the last 5 minutes, drizzle in more caramel.
No-Churn Method: Pour into a loaf pan, drizzle extra caramel on top, and swirl with a knife. Cover with parchment and freeze for 4–6 hours, stirring every hour for the first 3 hours for creamier texture.
Serve: Let the ice cream sit at room temperature for 5–10 minutes before scooping. Drizzle with remaining warm caramel sauce.
Prep time: 15 minutes Cook time: 10 minutes (for caramel) Freeze time: 4–6 hours Total time: About 5–6 hours

This Vegan Cinnamon Roll Cheesecake proves that healthy eating doesn’t mean giving up your favorite desserts. It’s creamy, cinnamon-swirled perfection in every bite!
There are frozen desserts you make when it is hot and you need something cold. And then there are desserts like this Vegan Blackberry Ice Cream — the kind that comes out of the freezer a deep, jewel-purple, almost impossibly vibrant color and scoops into wide bowls with a creamy, velvety texture that is so smooth and so intensely flavored with fresh blackberry that it stops people mid-conversation because what they are eating is genuinely, surprisingly extraordinary for something made without dairy. This is that ice cream. The one that tastes more like blackberries than any blackberry ice cream you have ever had from a store. The one that converts people who claim not to like vegan food. The one that you will make every summer for the rest of your life.
This recipe blends fresh blackberries into a pure, intensely flavored puree, strains out the seeds for a perfectly smooth base, then combines it with full-fat coconut cream and cashew cream to produce an ice cream that is simultaneously rich and creamy and explosively fruity in a way that no ice cream made with less fruit ever achieves. The coconut cream provides the fat and body that makes the texture genuinely scoopable and creamy; the cashew cream smooths out the coconut flavor so the blackberry is the only thing you taste; and a touch of lemon juice brightens and sharpens the berry flavor into something that tastes vivid and alive rather than dull and muted.
What makes this recipe so outstanding is the fruit ratio — using a full 500g of fresh blackberries for four servings means the ice cream tastes overwhelmingly, unambiguously of blackberry rather than of coconut with a hint of fruit, which is the fate of most plant-based ice creams that undersell their fruit.
This recipe is 100% vegan, naturally dairy-free, no-churn friendly, and one of those summer desserts that is worth making again and again while blackberries are at their peak.
½ cup (70g) raw cashews, soaked in hot water for 30 minutes and drained
80g (⅓ cup) powdered sugar
1 tsp vanilla extract
Pinch of salt
Instructions
Cook the blackberries. Combine the blackberries, granulated sugar, lemon juice, and lemon zest in a saucepan over medium heat. Cook, stirring occasionally, for 5–6 minutes until the berries have completely broken down and the mixture is jammy and deeply colored. Remove from heat.
Strain the puree. Press the blackberry mixture through a fine-mesh sieve using the back of a spoon, discarding the seeds and pulp. You should have about 300ml of smooth, intensely colored puree. Allow to cool completely — refrigerate until cold if needed.
Make the cashew cream. Drain the soaked cashews and blend with 3 tablespoons of water in a high-speed blender until completely smooth and silky. Set aside.
Make the coconut cream base. Open the refrigerated coconut cream cans and scoop out the solid cream — discard or save the liquid. Beat with an electric mixer for 2–3 minutes until smooth and thick. Add the cashew cream, powdered sugar, vanilla, and salt and beat to combine.
Combine. Pour the cold blackberry puree into the coconut cream base and fold until completely combined and uniformly purple. Taste — add more lemon for brightness or more powdered sugar for sweetness.
Freeze. Pour into a freezer-safe container and smooth the top. Press a piece of cling film directly onto the surface to prevent ice crystals. Freeze for at least 6 hours, or overnight.
Serve. Remove from the freezer 10–15 minutes before scooping to allow it to soften slightly. Scoop into wide bowls and serve with fresh blackberries and a drizzle of honey alternative if desired.
Pro Tips
Use the ripest blackberries you can find — the flavor of the ice cream is entirely dependent on the quality of the fruit. Peak-season blackberries that are fully ripe and slightly soft produce dramatically more flavor than under-ripe, hard berries.
Strain the puree thoroughly — blackberry seeds are numerous and hard and will ruin the texture of the ice cream if left in. Take the time to press every drop of puree through the sieve.
Refrigerate the coconut cream cans overnight — cold coconut cream whips into a thick, creamy base; room-temperature coconut cream stays liquid and produces a flat, icy result.
Let it soften before scooping — no-churn ice cream is firmer than churned ice cream. 10–15 minutes at room temperature brings it to the perfect scooping consistency.
Why No-Churn Ice Cream Works
Traditional ice cream is made in an ice cream machine, which churns the mixture constantly as it freezes — the agitation breaks up ice crystals as they form, producing the smooth, creamy texture we associate with good ice cream. No-churn ice cream achieves a similar result through fat rather than agitation: a high proportion of fat from the coconut cream and cashews means fewer water molecules are available to form large ice crystals, and the crystals that do form are small and evenly distributed throughout the fat matrix, producing a texture that is genuinely smooth and creamy without any mechanical intervention. The trick is making sure the fat content is high enough — which is why full-fat coconut cream is essential, and why the cashew cream addition makes a meaningful difference to the final texture.
Flavor Variations
Blackberry Swirl Ice Cream: Reserve ¼ of the blackberry puree and swirl it through the cream base just before freezing rather than mixing it in completely, for a striking purple-and-white swirl effect.
Blackberry Lavender Ice Cream: Add 1 teaspoon of dried culinary lavender to the blackberries while cooking, then strain it out with the seeds, for a floral, fragrant version that is deeply elegant.
Mixed Berry Ice Cream: Replace half the blackberries with raspberries or blueberries for a mixed berry version with a more complex fruit flavor.

Freezer: Store in a sealed, airtight container for up to 6 weeks. Press cling film directly onto the surface before sealing the lid to prevent ice crystals and freezer burn.
Texture after storage: The ice cream firms considerably after the first 24 hours in the freezer. Always remove it 10–15 minutes before serving to allow it to soften to a scoopable consistency.
Frequently Asked Questions
Can I use frozen blackberries?
Yes — frozen blackberries work beautifully. Thaw them completely before cooking and drain any excess liquid before adding to the pan. The flavor is slightly less intense than peak-season fresh berries but still excellent.
Do I need an ice cream machine?
No — this is a no-churn recipe that requires no special equipment beyond a blender, a sieve, and a freezer-safe container. The high fat content from the coconut cream and cashews produces a naturally creamy texture without churning.
Can I make this nut-free?
Yes — replace the cashew cream with an extra ¼ cup of coconut cream (scooped from the solid part of an additional refrigerated can). The texture will be very slightly less smooth but still very good.

There are frozen desserts and then there are frozen desserts like this Vegan Chocolate Frosty — the kind that you pull from the freezer at exactly the right moment and spoon into a tall glass and eat immediately because waiting even five more minutes is genuinely not possible, because it is so thick and so cold and so deeply, intensely chocolatey and so perfectly creamy in a way that is simultaneously rich and light and absolutely, completely satisfying that it stops everything else you were about to do. This is that frozen treat. The one that tastes exactly like the Frosty from the drive-through window — that perfect, signature frozen chocolate custard thickness that is somewhere between a milkshake and soft-serve ice cream and is neither and both at once — except this version is made entirely from plants, requires no ice cream maker, takes five minutes of actual work, and is better than anything you have ever ordered through a car window.
The secret to nailing the Frosty texture at home — that specific thick, spoonable, not-quite-liquid consistency — is frozen bananas. Ripe bananas, frozen solid and blended with cocoa powder, plant milk, and a generous spoonful of peanut butter or almond butter, produce a frozen dessert with exactly the thick, fudgy, cold-but-creamy texture that defines the Frosty experience. The banana is undetectable in the finished drink — all you taste is deep, rich chocolate — but it provides the body, the creaminess, and the natural sweetness that makes this version so extraordinarily good without any dairy, any added sugar, or any equipment beyond a blender.
What makes this recipe so outstanding is the two-freeze technique — blending and then returning the mixture to the freezer for 20 minutes before serving produces the signature thick, spoonable Frosty consistency that blending alone cannot achieve. Skip this step and you have a very good chocolate smoothie; include it and you have a Frosty.
This recipe is 100% vegan, naturally dairy-free, egg-free, ready in under 30 minutes, made with five ingredients, and one of those recipes that becomes an immediate, permanent fixture in your household from the first time you make it.

Ingredients
For the Chocolate Frosty
3 large ripe bananas, peeled, sliced, and frozen solid (freeze overnight)
3 tbsp unsweetened cocoa powder or cacao powder
½ cup (120ml) unsweetened oat milk or almond milk (use less for thicker, more for thinner)
2 tbsp peanut butter or almond butter (for creaminess and richness)
1 tsp vanilla extract
Pinch of salt
Optional Add-Ins
1 tbsp maple syrup or agave (if you prefer it sweeter)
1 tbsp dark chocolate chips, blended in or stirred through
½ tsp espresso powder for a mocha version
1 scoop vegan chocolate protein powder for a higher-protein version
For Serving (optional)
Vegan whipped cream
Dark chocolate shavings or cocoa powder dusting
Crushed vegan Oreos or cookie crumbles
Chopped toasted nuts
Instructions
Freeze the bananas. The day before (or at least 6 hours ahead), peel ripe bananas, slice into coins, and spread in a single layer on a parchment-lined tray. Freeze until completely solid. Properly frozen bananas are the foundation of the Frosty texture — they must be frozen all the way through, not just cold.
Blend. Add the frozen banana slices, cocoa powder, peanut butter, vanilla extract, salt, and plant milk to a high-speed blender. Start with ½ cup of plant milk — you can always add more but cannot take it back. Blend on high, stopping to scrape down the sides as needed, until the mixture is completely smooth with no banana chunks remaining. The mixture will be very thick — this is exactly right.
Taste and adjust. Taste the blended mixture and adjust — more cocoa powder for deeper chocolate flavor, more peanut butter for richness, a splash more milk if too thick to blend. Add maple syrup if you prefer a sweeter result (ripe bananas usually provide enough sweetness on their own).
The second freeze. Pour the blended mixture into a freezer-safe container or divide between two glasses. Cover and freeze for 20 minutes exactly — this is the step that transforms the blend from a thick smoothie into a true Frosty. The mixture firms up to the perfect spoonable, thick consistency.
Serve immediately. Remove from the freezer, give a quick stir if it has set too firmly at the edges, and serve in tall glasses or bowls immediately. Top with vegan whipped cream, chocolate shavings, or any toppings of your choice. Eat with a spoon — this is the correct Frosty experience.
Pro Tips
Use the ripest, most spotted bananas you can find — the riper the banana, the sweeter and more flavorful it is when frozen, and the more natural sweetness it contributes to the Frosty. Black-spotted bananas are ideal.
Start with less milk and add more — the texture of the Frosty depends on the ratio of frozen banana to liquid. Too much liquid and the result is a smoothie; too little and the blender struggles. Add milk a tablespoon at a time until the blender just catches.
Do not skip the second freeze — 20 minutes in the freezer after blending is what produces the signature thick, spoonable Frosty consistency. Served straight from the blender it is too thin; left in the freezer too long it becomes ice cream. 20 minutes is the window.
Serve immediately after the second freeze — the Frosty texture is best in the first few minutes after removal from the freezer. Left to sit it softens (still delicious, just thinner).
The Story Behind the Frosty
The Wendy’s Frosty was created by Dave Thomas, the founder of Wendy’s, when he opened his first restaurant in Columbus, Ohio in 1969. Thomas wanted a frozen dessert on the menu but felt that a milkshake was too thin and ice cream was too firm — he wanted something exactly in between, something that could be eaten with a spoon but was still cold and creamy enough to feel like a frozen treat. The original Frosty was chocolate only, made from a proprietary blend of chocolate and vanilla flavors that gave it its distinctive, slightly complex taste. A strawberry Frosty was added decades later, and the dessert has remained one of the most iconic fast food items in American history — recognizable by its texture alone. For plant-based eaters, recreating that specific texture at home was long considered impossible without dairy and eggs. Frozen banana technology changed that: the starch and natural sugars in frozen ripe banana produce almost exactly the same thick, creamy, cold-but-spoonable texture when blended, making the vegan Frosty not just a reasonable substitute but a genuinely superior one.
Flavor Variations
Mocha Frosty: Add ½ teaspoon of instant espresso powder along with the cocoa powder for a deeply coffee-chocolate version that is outstanding.
Peanut Butter Chocolate Frosty: Double the peanut butter to 4 tablespoons and add an extra tablespoon of cocoa for a Reese’s-inspired version that is extraordinarily rich.
Mint Chocolate Frosty: Add ¼ teaspoon of peppermint extract along with the cocoa for a cool, refreshing mint chocolate version.

Storage
Best consumed immediately after the 20-minute freeze — this is when the texture is at its peak.
Leftovers can be stored in an airtight container in the freezer for up to 1 week — they will freeze solid. Thaw at room temperature for 15–20 minutes, stir well, and serve once softened back to the right consistency.
Do not refrigerate — the mixture softens too much in the refrigerator and loses the Frosty texture entirely.
Frequently Asked Questions
Can I make this without bananas?
Bananas provide the structure, creaminess, and natural sweetness that make this recipe work. Without them, the texture is significantly thinner. For a banana-free version, use 1 cup of frozen cauliflower florets and ½ cup of canned full-fat coconut milk — the texture is less thick but still very good.
Can I use frozen bananas from the store?
Yes — commercially frozen banana slices work perfectly and save the step of freezing fresh ones. Make sure they are ripe bananas (yellow with spots) rather than green ones, which will taste starchy rather than sweet.
Can I add protein powder?
Yes — one scoop of vegan chocolate protein powder blends in beautifully, adds significant protein, and intensifies the chocolate flavor. Add it along with the other ingredients and blend as usual. You may need a splash more plant milk if the mixture becomes too thick.
Why does my Frosty taste too much like banana?
If the banana flavor is coming through, your bananas may not have been ripe enough before freezing. The riper the banana — the more black spots on the skin — the sweeter and more banana-forward the frozen banana becomes. Paradoxically, very ripe bananas taste less like raw banana and more like a neutral sweetener when frozen and blended with strong flavors like cocoa powder.
