🧾 Ingredients (Makes 8–10 Patties)

  • 1 cup boiled potatoes (mashed)
  • 1 cup mixed vegetables (carrot, peas, corn, beans – finely chopped)
  • ½ cup breadcrumbs (plus extra for coating)
  • 2 tbsp chickpea flour (optional, for binding)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp olive oil (plus extra for cooking)
  • 2 tbsp chopped fresh herbs (parsley, coriander – optional)

First, steam or boil vegetables until tender. Meanwhile, mash the potatoes in a large bowl.
Next, add the vegetables, breadcrumbs, chickpea flour, spices, herbs, and olive oil. Mix until well combined.

Then, shape the mixture into small patties of desired size. If the mixture is sticky, chill for 10–15 minutes.
After that, lightly coat patties with breadcrumbs for extra crispiness.

Finally, cook the patties:

  • Shallow Fry: Heat oil in a pan and cook for 3–4 minutes per side until golden.
  • Bake: Preheat oven to 200°C (400°F) and bake for 15–20 minutes, flipping halfway.
