Cook Time: 30 mins
Servings: 4–6

Ingredients

  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb mushrooms, sliced (button, cremini, or mixed)
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 4 cups vegetable or chicken broth
  • 1 cup sour cream or plain yogurt
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. First, heat oil or butter in a large pot over medium heat. Then, sauté the onions and garlic until soft and fragrant.
  2. Next, add mushrooms: Cook for 5–7 minutes until they release their moisture and begin to brown.
  3. Meanwhile, add spices: Stir in smoked paprika and thyme, cooking for 1–2 minutes to release their aroma.
  4. After that, pour in the broth and bring to a gentle boil. Then, reduce heat and simmer for 15 minutes to blend the flavors.
  5. Then, prepare the cream mixture: In a small bowl, whisk together sour cream and flour until smooth. Slowly add a few spoonfuls of hot soup to temper the cream.
  6. Next, stir the cream mixture back into the pot and cook for 5 more minutes until the soup thickens. Season with salt and pepper.
  7. Finally, serve hot, garnished with fresh parsley and, optionally, a slice of crusty bread.

Tips & Tricks

  • Next, for a creamier soup, blend half of the soup with an immersion blender before adding the cream mixture.
  • Then, for extra flavor, add a splash of white wine while simmering.
  • Finally, store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
