🧾 Ingredients

  • 1 cup spinach (finely chopped, fresh or frozen)
  • ½ cup boiled potatoes (mashed)
  • ½ cup dairy-free cream cheese or cashew paste
  • ¼ cup breadcrumbs (plus extra for coating)
  • 2 tbsp nutritional yeast (optional but recommended)
  • 1 clove garlic (minced)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • 1 tbsp olive oil
  • 2 tbsp cornflour mixed with 3 tbsp water (for coating)

👩‍🍳 Instructions

First, if using frozen spinach, thaw it completely and squeeze out excess water.
Next, in a bowl, combine spinach, mashed potatoes, vegan cream cheese, breadcrumbs, garlic, and spices.

Then, mix everything well until a thick mixture forms.
After that, shape the mixture into small bite-sized balls.

Meanwhile, dip each bite into the cornflour slurry. Then, coat evenly with breadcrumbs.
Now, heat oil in a pan or preheat an oven to 190°C (375°F).

Finally, shallow-fry or bake for 18–20 minutes, turning halfway, until golden and crispy.

⭐ Tips for Best Results

Firstly, squeeze spinach well to prevent soggy bites.
Additionally, chill the mixture for 15 minutes if it feels sticky.
Moreover, baking is a healthier option, while frying gives extra crispiness.
If you want more flavor, add a pinch of nutmeg or chili flakes.

🔄 Variations

  • Air Fryer: Air-fry at 180°C for 12–15 minutes
  • Gluten-Free: Use gluten-free breadcrumbs
