⏱ Time

Prep: 20 minutes | Cook: 10 minutes | Serves: 2–3 (makes 6–8 rolls)

🧺 Ingredients

  • 2 cups sushi rice, cooked and seasoned
  • 4–6 sheets nori (seaweed)
  • 1 small cucumber, julienned
  • 1 small carrot, julienned
  • 1 avocado, sliced
  • ½ bell pepper, thinly sliced
  • Optional: pickled radish, tofu strips, or sprouts
  • Soy sauce, pickled ginger, and wasabi for serving

👩‍🍳 Instructions

Firstly, prepare the sushi rice by cooking it according to package instructions. Then, season it with rice vinegar, a pinch of sugar, and salt, and let it cool slightly.

Next, lay a nori sheet shiny-side down on a bamboo mat. After that, spread a thin, even layer of rice over the nori, leaving 1 inch at the top free of rice.

Then, arrange cucumber, carrot, avocado, bell pepper, and optional fillings in a line near the bottom edge of the rice.

Afterwards, use the bamboo mat to roll the sushi tightly from bottom to top. Make sure to seal the edge with a little water.

Finally, slice the rolls into 6–8 pieces using a sharp, damp knife. Serve immediately with soy sauce, pickled ginger, and wasabi.

🌟 Tips & Variations

Firstly, keep your hands slightly wet while spreading rice to prevent sticking.

Moreover, for extra protein, you can add marinated tofu, tempeh, or edamame.

In addition, spice lovers can drizzle sriracha or vegan mayo inside the roll for heat.

Furthermore, roasting or grilling vegetables like sweet potato or mushrooms adds extra flavor.

Finally, experiment with different vegetables to create colorful and nutrient-rich rolls.
