  • ¾ cup thick coconut cream
  • ⅓ cup maple syrup or powdered sugar
  • ¼ cup fresh lemon juice
  • 2 tbsp melted coconut oil
  • 1 tbsp vanilla extract
  • 1–2 tbsp cornstarch or agar-agar powder
  • Pinch of salt

1️⃣ Prepare the Crust

First, mix crushed biscuits with melted vegan butter.
Next, press the mixture firmly into the base of a springform pan.
Then, refrigerate while preparing the filling.


2️⃣ Make the Filling

Meanwhile, add soaked cashews, coconut cream, sweetener, lemon juice, coconut oil, vanilla, cornstarch, and salt to a blender.
Blend until completely smooth and creamy.

Finally, refrigerate for 4–6 hours or until fully set.
